This is a Junmai sake brewed with Nara’s traditional method of Bodaimoto. The rich and complex taste of Umami leaves great impressions of sophisticated Junmai sake.
What is Bodaimoto-method?
Back in the beginning of the 1400s, this method was invented in a temple called Bodaisan Shouyakuji. It’s a unique method of brewing in a way that it uses “Raw Rice”. Many other brewing processes has been originated from this Bodaimoto-method.
The Shoryakuji lactic-acid bacilli and Shoryakuji yeast are produced with the rice and water available inside the Shoryakuji temple. By utilizing modern brewing-technology, the traditional unique taste of Nara is enhanced. This Bodaimoto-method has a cultural aspect that it has been passed to many generations even until today.
