This Junmai Daiginjo is brewed in traditional cedar barrels (Kioke), offering a delicate cedar aroma and smooth, elegant texture that reflect the centuries-old method of wooden barrel brewing. Complemented by the rich umami of Niigata’s premium Gohyakumangoku rice and pristine spring water from the foothills of Mt. Suganadake, the bottle is wrapped in a thin wooden veneer (kyōgi), hiding a playful story about the 9th-generation brewer beneath. First revived in 2010 after nearly 60 years, this sake delivers an elegant, silky experience with a delicate dryness and a refined cedar character from the barrels, followed by a lingering, savoury rice flavour.
