“CHOZO” means store, in this case it refers to the six-month of a maturation period, and so NAMA-CHOZO is sake that has been in unpasteurized form, and pasteurized one time only after maturation (usually a six-month period) or just before shipping.
It is brewed at lower temperature and a longer period with carefully selected rice polished to 45%. It has a floral aroma with gentle finish.
