Crafted with long, low-temperature fermentation, Ninki 11 is unique in that it finishes at just 11% alcohol, yet retains the richness and depth of a full sake.
This sake has a lively, refreshing taste thanks to its higher acidity. The special yeast creates more of the same acid found in apples, giving it a bright, crisp, apple-like flavour. The aroma is light and gentle, with soft fruity notes.
Best enjoyed well-chilled in a wine glass, though a gently warmed version (nurukan) reveals another layer of complexity.
