This sake combines the lively freshness of shiboritate (just-pressed sake) with the smooth harmony that comes from careful aging. Immediately after pressing, it is quickly chilled to –5°C to preserve its vibrant character, then gently pasteurized at low temperature and matured in the bottle at the brewery.
The result is a Junmai Daiginjo with a bright, fruity aroma and a refined, rounded taste. Fresh and elegant, it pairs beautifully with light and delicate dishes, especially fresh seafood.
