Yamagata prefecture has been putting effort into creating different kinds of sake rice in order to produce a variety of sake over many years. This includes sake rice brands such as Dewa Sansa, Dewanosato and Dewa Kirari that are made for Junmai Ginjo, Junmai Shu, and regular sake respectively.
Yukimegami is a new brand of sake rice that is the culmination of the production of these sake rice brands. This new brand could only be made after a long history of producing sake rice. The starch is found within the big grain of rice with a 48% polishing ratio. Such a thorough process creates a highly fragrant and delicate taste.
