Introducing Japan’s Sake Breweries

About Dewazakura Shuzo Brewing Company (Tendo, Yamagata)

Dewazakura Shuzo was founded in 1892 in Tendo, a town in Yamagata prefecture 300 kilometers north of Tokyo. From Tokyo, you can travel to Tendo via a 3-hour ride on the Shinkansen bullet train. 

Tendo is located in a basin surrounded by mountains. The region exhibits extreme differences between high and low temperatures, making it ideal for growing delicious produce such as fruits and rice. Heavy snowfall in the winter generates ample amounts of pure water. For these reasons, many consider Tendo as an ideal place for sake brewing.

Traditional Sake making

Since Dewazakura was founded, we have persevered in our craft of brewing sake by hand without relying on machines. We are able to brew high quality sake because we manage product quality using the five senses– sight, smell, sound, touch, and taste.

When we make koji, a sake craftsman stays in the brewery overnight to observe the koji and adjust the temperature and humidity level as needed. The koji is then mixed in tanks small enough to be mixed by hand. Even though our sake is priced affordably, we do not cut any corners in production. We brew our sake using the same process for brewing high grade sake.

“Ginjo” Sake

In 1980, few people knew of the term “Ginjo”, even in Japan. We wanted to spread the word about great tasting Ginjo sake, so we created and sold “Oka Ginjoshu”, which brought about a “Ginjo boom” that swept through Japan. Over several years, the name “Ginjo” traversed international borders and became a worldwide phenomenon.

As a whole, Dewazakura sake has a rich aroma and a smooth texture. Many people characterize our sake as being easy to drink. Dewazakura produces a wide variety of sake, from sparkling and vintage to nigori (cloudy sake). We actively pursue and employ the most cutting-edge brewing technologies to catch our customers’ attention in different ways.

Store and age in a low temperature environment

Furthermore, simply brewing high quality sake is not all that we do; we also take meticulous care to ensure our sake reaches customers in the absolute best condition. Dewazakura is equipped with a massive cold storage system which can store sake at a low temperature of negative five degrees celsius. The system allows us to stock high volumes of sake without compromising its quality, and it is why Dewazakura always has lots of high quality aged sake in stock.

Strong Local Roots

Our sake brewing has deep local roots. As part of our push for our sake to be recognized as one of the best tasting Yamagata-brewed sake, we have obtained a GI Yamagata certification.

We are working hard to become a renowned and well-loved brand both in and outside of Japan. Every year, we win several awards in international and domestic competitions. We have also won first prize (the Champion Sake) twice in the prestigious International Wine Challenge.

As one of Japan’s first brewing companies that began exporting sake internationally, our goal has always been to allow more people to enjoy Japanese sake. We will continue to work hard to promote and deliver Japan’s sake culture to people in every corner of the world.
