SUITEN IPPEKI(水天一碧)is daiginjo sake from Saito Shuzo. The Saito Shuzo brewery has been running for more than 110 years in Fushimi, where is one of wards in the city of Kyoto, in Kyoto Prefecture.
Fushimi’s underground spring water is famous and it is one of Japan’s 100 best clear water spots. The spring water is soft, mellow and also delicious! The name of Fushimi is originally from “underground water” – Fushimizu or Fukusui. There are many SAKE breweries in the area because of the water which is the most important parts of sake making process.
Suiten Ippeki is made from well-known brewing rice “YAMADA NISHIKI” and using the pure spring water called “SHIRAGIKU SUI”.
This sake is smooth clean and dry so pair wonderfully with seafood.
